Wake up to the smell of Blueberry Pancakes

GF Blueberry Pancakes

  • Makes 10 small or 8 large pancakes
  • Prep time: 10 minutes 

Ingredients

1)    2 ripe bananas

2)    3 free range farm eggs

(for vegan soak 2 tbsp chia seeds in 1/2 cup of vegetable milk or water) 

3)    1 cup buckwheat flour

4)    1 cups of Oats

5)    2 ½ cups of either Oat, Almond or Soy milk (If you want thin  pancakes-crepes like then add more milk)

6)    2 tsp cinnamon

7)    3 tbsp Honey (for vegan then sub honey for agave or date syrup)

8)    2 tbsp coconut oil (also for cooking use small amount to grease pan)

9)    1 cup Blueberries

10) 2 tbsp Chia seeds

11) Additional you may want to add walnuts or chocolate chips 😉 

Enjoy these filling healthy GF or vegan pancakes with some avocado on Toast 😉 

OH!  and of course don’t forget to pour some warm maple syrup for complete satisfaction!
